Since it’s snowing and cold outside I thought it would be a great night to fix some vegetable soup with pimento cheese sandwiches. I love soup especially on a cold night. Mom had an easy vegetable soup recipe that I use. My sister, Traci put the recipe on her blog back in October. If you would like to have it you can go here.
Here’s what you’ll need:
1 8 oz. bag of shredded cheddar cheese (I like the shredded Velveeta)
1 oz. pimentos
1/2 teaspoon apple cider vinegar
3 tablespoons mayonnaise ( I use Hellman’s)
1 tablespoon sugar
salt & pepper to taste
Place the cheese in your bowl.
Add 3 tablespoons of mayonnaise and stir. (You can add a little more at the end if you think you need it.)
Next add the pimentos and stir. I add some of the juice too because I think it makes it taste better.
Add sugar and vinegar. Salt and pepper to taste. Place in the refrigerator and chill for at least an hour.
Serve with crackers or bread. We like the Flip Sides Town House crackers. I also usually double this recipe. Enjoy and stay warm!!
Have a blessed day!
Love the way you picture each step. I am such a visual cook… WHEN I cook at all, so this was fun to see. I’ll be adding the touch of vinegar…. Thanks Cyndi!

I want to see that plate with all the words!
Cyndi! The vinegar!!! That’s what i’ve been missing. Pimiento cheese is a great thing for a low-carb diet, which is what my husband has been following, but my homemade pimiento cheese was just a little off–good, but not great. I forgot about vinegar! Thank you for posting this.
By the way, I saw on your profile that you’re a dental hygienist. My pastor’s wife (who happens to be one of my best friends) is a dental hygienist, too! And man, does she have a ministry to people who end up in her chair. 🙂
Yes, it is cold outside…and yes I am so glad to have met you! Things are lovely over here. What a beautiful family, you are an inspiration :)!
Love,
Amy
Hey Cyndi!
I stumbled across your blog this evening and so glad to “meet” you! Love you site! I enjoyed reading several of your past posts and my heart is deeply touched about your mom. What a day of rejoicing it will be when we all see Jesus and shout the victory, TOGETHER!!!
I love your photos too and look forward to stopping back for a visit!!
Oh, I’m following along with you now and hope you can drop by my blog sometime. What a blessing it is to meet new BGF’s (bloggy girlfriends)!
Sweet Blessings!
Jackie
Cyndi I have just bought ingredients for pimento cheese and my recipe is similar to yours except for the vinegar. I think that would be a great addition and I am going to try it out! Enjoy your blog. Stay warm!
Oh yeah…your nails look FABULOUS,darling.
Oh no she didn’t!!! Did you just share a recipe? I am seriously laughing out loud…really loud! Jonathan doesn’t know what is so funny! Is this a cooking blog and I missed it?
Thanks for the laugh. 🙂
And somewhat seriously, thanks for the pimento cheese recipe. I’ve been wanting one.
Still laughing,
Traci
Looks great!
I luv chezzzzzzzz.

Hi Cindi. Your pictures are so good. I love the photo with the fireplace.
It’s funny my dad always made his own pimento cheese. Everyone loved it and Aunts would ask him to make them some to take home. Of course Daddy loved that. Thanks for sharing your memory and reminding me of mine.
Hugs…Tracy 🙂
BTW – I just wanted to tell you something. You know how they are some people or some peoples homes you go to that you can just feel the spirit of the Lord. Well whenever I read a post of yours or Traci’s, that’s what I feel. When I see you faces, they radiate God’s love, your Mothers photo has always touched me the same way. What a wonderful job your parents did raising their family. I feel a little silly saying this as I must come across as some weird stalker (Lord forbid), but I just wanted you/ya’ll to know that the spirit is seen in you and it’s very warming and touching.
Cyndi~~I have LOVED reading your posts…and Traci’s, too! I usually check your blog out about twice a month and when I do, you can bet several hours have past by the time I’ve read your’s and Traci’s blogs. Matter of fact, you posted this one while I had linked over to Traci’s. There is one picture that is covering up the words… I’m not sure if it is my computer doing this or if others have the same problem. I’ll check back again, but you may want to check it out, too. Keep it up…You are blessing a lot of folks! including me. ~~LaDonna
