Baby it’s Cold Outside-Homemade Pimento Cheese

Since it’s snowing and cold outside I thought it would be a great night to fix some vegetable soup with pimento cheese sandwiches. I love soup especially on a cold night. Mom had an easy vegetable soup recipe that I use. My sister, Traci put the recipe on her blog back in October. If you would like to have it you can go here.

Here’s what you’ll need:

1 8 oz. bag of shredded cheddar cheese (I like the shredded Velveeta)

1 oz. pimentos

1/2 teaspoon apple cider vinegar

3 tablespoons mayonnaise ( I use Hellman’s)

1 tablespoon sugar

salt & pepper to taste

Place the cheese in your bowl.

Add 3 tablespoons of mayonnaise and stir. (You can add a little more at the end if you think you need it.)

Next add the pimentos and stir. I add some of the juice too because I think it makes it taste better.

Add sugar and vinegar. Salt and pepper to taste. Place in the refrigerator and chill for at least an hour.

Serve with crackers or bread. We like the Flip Sides Town House crackers. I also usually double this recipe. Enjoy and stay warm!!

  2. Cyndi! The vinegar!!! That’s what i’ve been missing. Pimiento cheese is a great thing for a low-carb diet, which is what my husband has been following, but my homemade pimiento cheese was just a little off–good, but not great. I forgot about vinegar! Thank you for posting this.

    By the way, I saw on your profile that you’re a dental hygienist. My pastor’s wife (who happens to be one of my best friends) is a dental hygienist, too! And man, does she have a ministry to people who end up in her chair. 🙂

    It’s funny my dad always made his own pimento cheese. Everyone loved it and Aunts would ask him to make them some to take home. Of course Daddy loved that. Thanks for sharing your memory and reminding me of mine.

    BTW – I just wanted to tell you something. You know how they are some people or some peoples homes you go to that you can just feel the spirit of the Lord. Well whenever I read a post of yours or Traci’s, that’s what I feel. When I see you faces, they radiate God’s love, your Mothers photo has always touched me the same way. What a wonderful job your parents did raising their family. I feel a little silly saying this as I must come across as some weird stalker (Lord forbid), but I just wanted you/ya’ll to know that the spirit is seen in you and it’s very warming and touching.
