Wanda’s Kitchen…Roasting Pumkin Seeds

 

 

I was looking for some recipes this week and I ran across some my Mom had used when she was the contributing food editor for our local newspaper several years ago. I know I’ve shared with you that she wrote for our newspaper and then went on to write for HomeLife christiain magazine.

Mom loved to find recipes that she could share with her children and with her grandchildren.She loved her family!! Just ask anyone who knew her they’ll tell you, she talked about us all the time.

Mom loved this time of the year and we all loved heading to Mom and Dad’s house and eating some delicious food and spending time together. I miss just “popping” in and smelling fall candles burning and seeing Mom’s house all decorated with pumkins and mums. Every one of us loved being at Mom and Dad’s house. I treasure those memories and I want to make those same memories in my home.

I wanted to share with you how to roast pumpkin seeds. Mom loved to do this with her grandchildren. She put this in one of her articles in the local newspaper.

   

Here is part of what Mom wrote:

Now’s the time to get the family together to carve a happy-face jack-o-latern that will greet the children before they knock at your door.

Be sure to save the pumpkin seeds for roasting. They make a crunchy snack the whole family will enjoy.

Roasted Pumpkin Seeds

Wash the seeds and drain them on several layers of paper towel.

Melt 2 Tablespoons of butter in a large skillet. Add 1 teaspoon salt.

Add 2 cups pumpkin seeds and saute about 3 minutes. Make sure all the seeds are coated with butter.

Spread seeds on a cookie sheet and bake in an oven preheated to 300 degrees for about 25 minutes.

Drain on a paper towel until pumpkin seeds are crisp

Store seeds in an air tight jar until used.

Make small treats of pumpkin seeds by placing 1/4 cup of seeds in the center of a 6-inch square piece of cellophane wrap. Bring up the edges of the wrap and tie closed with an orange or black ribbon.

Many of you may not celebrate Halloween but pumpkin seeds are just a yummy fall treat and so much fun to share with your children or your grandchildren. They’ll love it!!

  1. Yummy! I knew it was possible to roast pumpkin seeds, but I never knew just how to do it. Thank you for sharing this.

  2. Cyndi, This is such a thoughtful thing to do and such a blessing! I’ll look forward to each Friday for Wanda’s Kitchen traditions. I remember spending such special times with her in Church kitchen.
