Lovin’ Me Some Comfort Food!

It’s funny how some birthdays stick out in your mind.

You remember the food, or the cake or the presents you opened.

This was a picture of me on my first birthday (the picture quality was poor in the 60’s)…….

 

 

Okay, I don’t remember it but I bet I loved that tricycle!

I remember my 18th birthday. Mom asked what I wanted for my birthday dinner.

I asked for lasagna and I wanted a chocolate cake with chocolate icing. Yum!

I still love lasagna and chocolate cake. Actually I love chocolate anything!

This year I wanted lasagna again and my daughter fixed the best chocolate cake evur!!

A few years ago a friend gave me this lasagna recipe

and it’s my favorite so I thought I’d share it with you.

Ingredients:

1 lb. lean hamburger

1/8 tsp. garlic powder

1- 14 ounce can diced tomatoes

1 -8 ounce can tomato sauce

1- 6 ounce can tomato paste

2 tsp. dried basil

1 tsp. dried oregano

2 tsp. parsley

1/2 tsp. salt

1/2 tsp. pepper

5 ounces lasagna noodles (6 noodles)

1 beaten egg

2 (2 cup) packages of mozzarella cheese

(you can also add cottage cheese or ricotta)

Directions:

Put noodles on to boil. Brown meat with the garlic powder. While the meat is browning

combine the diced tomatoes, tomato sauce and tomato paste in a saucepan.

Then add basil, oregano, salt and pepper to tomato mixture. Bring to a simmer.

After the meat is browned drain excess grease and combine in the tomato sauce.

While everything is simmering and noodles are cooking, mix the cheese, beaten egg and parsley together.

Drain noodles. Begin your layers–1st layer is 3 noodles, half sauce and the half cheese.

Repeat this for a second layer. Bake in a 375 degree oven for 30-35 minutes. Enjoy!

    I have almost the same recipe for that, the only thing different I split my meat with either pork or Italian sausage. It makes all the difference in the world. So half hamburger and half sausage. YUMO
