Not So Pumpkin, Pumpkin Muffins

 

Well, I finally tried this pumpkin recipe that’s been floating around Pinterest and blogland. I have to say I was a little skeptical because you only need two ingredients. Yep, that’s right, two!

1 Yellow Cake Mix

1 can of Pumpkin

Mix the dry yellow cake mix with the can of pumpkinPlace in a greased bread pan, or muffin tin and bake at 350 degrees until done. That’s it!

They are super simple, taste great and not too pumpkiny (I don’t love pumpkin). I added some milk chocolate chips to mine because I think most things taste better with chocolate!

If you don’t want to use chocolate chips you could use a cream cheese glaze:

In a small glass mixer bowl place cream cheese. Microwave at high for 15 seconds just to soften. Add confectioners’ sugar, softened butter, milk and vanilla. Beat with electric mixer until smooth.

I think you’ll love them!

    Cyndi – I just put the two ingredient pumpkin cake in the oven right before I read your post. Spice cake and a can of pumpkin. :) Unlike you, I love pumpkin but I like a simple recipe even better.

    I LOVE…LOVE…LOVE..these muffins. I’ve made mine with a chocolate cake mix, and a spice cake mix. Yum oh!!!!
