Not So Pumpkin, Pumpkin Muffins

 

Well, I finally tried this pumpkin recipe that’s been floating around Pinterest and blogland. I have to say I was a little skeptical because you only need two ingredients. Yep, that’s right, two!

1 Yellow Cake Mix

1 can of Pumpkin

Mix the dry yellow cake mix with the can of pumpkinPlace in a greased bread pan, or muffin tin and bake at 350 degrees until done. That’s it!

They are super simple, taste great and not too pumpkiny (I don’t love pumpkin). I added some milk chocolate chips to mine because I think most things taste better with chocolate!

If you don’t want to use chocolate chips you could use a cream cheese glaze:

In a small glass mixer bowl place cream cheese. Microwave at high for 15 seconds just to soften. Add confectioners’ sugar, softened butter, milk and vanilla. Beat with electric mixer until smooth.

  1. Cyndi – I just put the two ingredient pumpkin cake in the oven right before I read your post. Spice cake and a can of pumpkin. 🙂 Unlike you, I love pumpkin but I like a simple recipe even better.
