Hi ladies! Today I wanted to share with you a dish I fixed for a sweet young lady in my Sunday School class,  who recently had a baby.

It’s easy and delicious!

( I didn’t cook it. I wrapped it in reynolds wrap and put the baking directions on it.)

Baked Tortellini Carbonara

1 20 oz. pkg. refrigerated 3-cheese tortellini (I use two 9 oz. packages because that’s what my grocery store has)
1 10.75 oz. can Low Sodium cream of mushroom soup
1 16 oz. jar alfredo sauce
1/2 tsp. garlic powder
1 1/2 cups shredded parmesan cheese
6 slices bacon (cooked & crumbled)
1 cup frozen peas

Cook tortellini according to package directions. Drain & set aside.

Stir together alfredo sauce, soup, garlic powder, and 3/4 cup parmesan cheese in a large mixing bowl. Add drained tortellini, bacon crumbles, and peas. Gently stir together until tortellini is well-coated with sauce. Pour mixture in a large baking dish. Sprinkle with remaining 3/4 cup parmesan cheese.

Bake at 375 degrees for 25 – 30 minutes until bubbly.

NOTE: To save time, this dish can be made up to 2 days in advance and kept in refrigerator. Baking time may need to be lengthened slightly because it will be cold.

  2. Your tortellini carbonara recipe sounds delicious! My husband & I went out for dinner with some friends last weekend & I actually order that at the restaurant….it was sooo good! I’ve been thinking about it ever since! Maybe I will give your recipe a try! Is there a particular brand of alfredo sauce you like to use?

    p.s. thank you again for the book! I can’t wait to get it!
