Blueberry French Toast Casserole
Today I wanted to share one of the recipes I tried on my “clean eating” journey. I love french toast and when I found Blueberry French Toast Casserole on The Gracious Pantry’s website, I knew I had to try it.

It’s easy to make and  delicious. The only thing that I would say, it’s not super sweet. The recipe calls for 1/4 cup honey, I used 1/2 cup. If you want, you can serve it with some maple syrup. I like my french toast sweet!

I started my “clean eating” journey almost a month ago. So far here are some things I’ve noticed:

**It’s not as hard to fix good meals as I thought it would be, thanks to all the great websites I’ve found.

**My energy level has been amazing! This is the one thing that has shocked me. I didn’t really believe people when they said that processed foods make you feel tired.

**I’ve also (this is a shocker) enjoyed cooking! There’s something about cooking something you know is good, really good, for your family. It’s made all the difference for me.

  2. I have Always had a Big ol Sweet Tooth! But 3 weeks ago I cut out all sweeteners but raw honey, and limit that too. I have to tell you I didn’t have much confidence that I could do that part of my diet. But it has amazed me that my taste buds have changed! Maybe not having any makes me notice the little bit of honey here and there. Hope that will kick in for the rest of you gals!

  3. Thanks for sharing this recipe. I’m looking for blueberry recipes for the 24 pounds of blueberries we picked last week. I freeze them so we have them all winter long. We can have blueberry french toast year round!

  4. I’ve been trying! I didn’t sign a commitment or anything, just thought I’d give it a try since my husband and I have made some other steps in getting healthy. I actually love it too! I agree, it makes me feel better just to know I’m preparing really wholesome meals, and not putting so much junk into my body. At times, it reminds me of the way my grandparents ate. It sure does cut down on eating out, don’t you think. Thanks!

  5. Hi Cyndi, this one looks like I’m going to have to try it!! I’m with you, I like things like this to be sweet. Did you find that going with the 1/2 cup plus the maple syrup made it sweet enough even for those who really have a sweet tooth and don’t care about sugar content? My sisters and I are having a brunch for my parents next weekend to celebrate their birthdays. Thanks. Be so blessed!

  6. Thanks for sharing – this looks delicious! I suppose under Clean Eating you don’t use sugar? Would this recipe still be considered Clean if you doubled the amount of honey or used sweetened almond milk?

  7. By “clean eating” does this recipe site/ or do you, Cindy, mean unprocessed food (scratch cooking) or eating all organic foods? I first learned this term from Tosca Reno, who used it to mean organic food. But she also cooks from scratch too. It truly is a Journey to healthy eating! My journey now has me off of all grains, starchy veggies and sugars (only some raw, local honey). It is to heal my food allergies/ IBS that I have had all my life. It may be interesting for some to read more by googling SCD (specific carbohydrate diet) or GAPS (gut and psychology syndrome) or AIP (auto immune protocol) these are similar to The Maker’s Diet and Paleo but can heal bowel disease, which leads to auto immune problems, and can help autism, etc. I believe we each have certain foods that make us healthy. For me, all the whole grains I ate for years were actually hurting me. I am glad you are getting energy! That means you are eating what your body needs! Since you have done the Pink sea salt change, the next good thing I can share is starting each morning with the juice of half a Lemon + a Tbsp of Local Honey + a cup of warm water. It is like lemonade and is good for you in Many ways. <3

  8. Hi Cyndi, This looks so good! I’m going to try it too. You’ve inspired me to visit some clean eating sites as well. I already cook ALOT and love it… always have. It’s been interesting to me that because we eat mostly home cooked meals that are mostly made from scratch that we are already really following a clean eating life style. I am still trying to make a few adjustments to some recipes just to make them more healthy. Little things can make a big difference. Thanks for the recipe and encouragement! Blessings, Krista
