Seasonal Tradition: St. Patrick’s Day Cookies

You don’t have to be Irish to enjoy St. Patrick’s Day! Claire and I decided to make some St. Patrick’s Day Cookies. I’m using a recipe my mom shared with me years ago. These cookies have a hint of almond flavor, making them so good!

I ordered all my groceries using my Walmart+ membership and had them delivered right to my door. It’s so convenient, and with my membership, I get free grocery delivery (with a $35 minimum, restrictions apply).

My mom was a food editor for our local newspaper, and I have all her recipes from the newspapers in a notebook. I love to get them out and make some of her favorites.

Here is her recipe:

Cream Cheese Sugar Cookies

1 cup sugar
1 cup butter, softened
3 oz. cream cheese, softened
1/4 tsp. salt
1/2 tsp. almond extract
1/2 tsp. vanilla extract
1 egg yolk (reserve white)
2 cups all-purpose flour

Blend sugar, butter, cream cheese, salt, almond extract, vanilla, and egg yolk with a mixer. Mix in flour until well blended. Refrigerate the dough for two hours.

Heat oven to 375 degrees. Roll out dough one-third at a time on a lightly floured surface. Cut out cookies as close together as possible using a cookie cutter dipped in flour.

Place the cookies one inch apart on ungreased cookie sheets. Move cookies to and from baking sheets with a wide spatula to prevent breaking. Leave cookies plain or, if desired, brush with slightly beaten egg white and sprinkle with green-colored sugar. Bake for 7 to 10 minutes or until the bottoms of the cookies are a light golden brown. Cool completely. After cooling, you can use the almond glaze below.

Almond Glaze

1 cup confectioner’s sugar=
1/4 tsp. almond extract
2 T. water
4 drops of green food coloring.

Stir all ingredients until smooth. Pur 1 teaspoon glaze on each sugar cookie. Use the back of a teaspoon to spread the glaze evenly over the cookie. Let glaze dry, and enjoy!

Claire loves to bake, and she’s the best little helper! The cookie dough had to chill for two hours before making the cookies, so I made the dough before Claire came over.

We brushed egg whites over the cookie dough before adding green sprinkles.

We decided to ice some of the cookies with the almond glaze.

We had so much fun baking our cookies; we can’t wait to bake some Easter cookies!

  3. Grandchildren are such a blessing. I’m very close to my 12 year old granddaughter. She spends the night with me whenever she has a chance. Since she was 4 she’s been my shopping buddy. Her parents and her brother know Jesus too. I’m praying for my son and his family. Your granddaughter is so cute. Reminds me of mine how dramatic she would get when she got hurt.

  5. I agree Cyndi, there is no greater joy. My 3 adult kids and their spouses know the Lord and my 3 little grandchildren are learning about Him. I’m so thankful and blessed. I got teary eyed as soon as I opened this post. I use to live closer to at least one of my grand kids. She’s almost 4. I’ve been with her and babysat when they needed, since she was newborn. We are so close. They just moved 4 hours away a year ago. My heart aches for her, them. It aches for the others two they are 4 1/2 and 3 hours away. I had hopes before I had grandchildren that I too could be close and bake etc with them. God had other plans for them. You are blessed to have all 3 of yours so close. They all are coming for Easter so I’m excited for that. Thanks for sharing your moms cookie recipe. They sound yummy. My favorite cookies are always ones with almond extract in them. I have food allergies so can’t bake the same as others, but it’s still fun to see new recipes. I know you miss your mama and I’m glad you have her recipes for you and to pass on someday. Your mama was with you all that day. Thanks for being real in your introduction. When we read blog post they all sound so glamorous, but there is behind the scenes.
