Stars & Stripes Pasta Salad with Walmart+

Summer is almost here, and I’m ready for some outdoor grilling. Who can resist the tempting aromas of traditional favorites such as hot dogs, hamburgers, potato salad, baked beans, coleslaw, and corn on the cob?

If you’re looking to add something new to your menu, this recipe was one of my mom’s, and it is delicious and perfect as a side dish, but the stars and stripes make it especially fun to serve for Memorial Day weekend or the 4th of July.

Stars & Stripes Pasta Salad

6 oz. cheddar cheese
6 oz. Monterey Jack cheese
4 oz. ham
8 oz. rotini or other pasta cooked according to the package directions
3/4 green pepper chopped
3 green onions, chopped
1/3 cup light olive oil
2 tbsp. balsamic vinegar
1/2 tsp. salt
Tomato wedges
1 small aluminum star-shaped cookie cutter

Cut cheese into star shapes with a cookie cutter. Cut ham in 1/2 inch strips for stripes. Set aside 6 to 8 pieces for garnish. Chop the remaining cheese and meat into 1/4-inch dice. Mix with pasta, green pepper, tomato, and onion. In a small bowl, combine oil, vinegar, and seasonings. Add to pasta mixture and mix. Top with reserved stars and stripes cutouts from the cheese and ham. Makes 10 to 12 servings.

  5. Cute idea on the pasta salad to do the stars and stripes. I have a go to pasta salad and its similar but mine has red and green peppers and red onion and cheddar cheese and salami and olives and italian dressing. I think that is it. Well and of course the spiral pasta LOL I haven’t made it for awhile the regular way because my family and myself now have certain allergies, so many of the old time recipes I use to use we have to change up. I see your groceries on the counter and was thinking how I’d have to change up most of them to gluten free buns, gluten free graham crackers etc. etc. etc. Its hard and I don’t know if we will ever get use to it. I have all my kids and grands coming for overnight for a few days over the 4th and I have to plan ahead for the meals, as it can be really difficult to work around mine, my two daughters and my daughter-in-laws different allergies. Thanks for sharing your mom’s recipes. I’m sure you feel her with you when you make it and its like she is at your event when you serve it. Blessings.
